Shelf life
About 12 months, stored properly. There are no preservatives, so reseal the bag.
Storage
No fridge needed. Keep the bag cool, dry and out of the sun. Dry hands only when you reach in. Moisture is the one thing that'll ruin them.
Why pieces vary
Hand-cut and minimally processed. Each piece is roughly 1 to 3 inches across. It's real meat, so no two are the same shape.
